Bad day? Week? Month? Life? I've got the cure. Really, all you need is to have had a bad minute to justify eating chocolate and marshmallow fluff for dinner. Because that's essentially what this is.

You might me better off eating it for a Sunday afternoon brunch after a rough Saturday night, when indulgences are always excused. But I had it for dinner. And I refuse to feel bad. So there.

If you know me, you know I have a special place in my heart for s'mores. I think it's one of the best flavor combinations in the world and I would love to recreate those flavors a million different ways. Did you know you can even make smores in a skillet?

When the idea of s'mores pancakes crossed my mind, I realized it could be pretty perfect. Graham cracker pancakes, marshmallow fluff, and chocolate sauce. Simple, yet beyond satisfying.

🗒 Ingredients

There are a couple different components to this pancake recipe, but you can also simplify it if you want. I use homemade fluff, but you can easily replace it with store-bought!

Here's everything you need for the pancakes (be sure to see the recipe card at the bottom of this post for ingredient amounts and full recipe directions):

  • All-purpose flour
  • Granulated sugar
  • Baking powder
  • Salt
  • Graham cracker crumbs
  • Large egg
  • Unsalted butter
  • Milk of your choice: dairy or non-dairy substitute of your choice
  • Chocolate chips
  • Hershey's milk chocolate bar

And if you're planning to make your own marshmallow fluff, here's everything you need:

  • Large egg whites
  • Corn syrup
  • Salt
  • Confectioners' sugar
  • Vanilla extract
  • Cream of tarter

👩‍🍳 How to make homemade marshmallow fluff

I made my own marshmallow fluff for this recipe because a) it's the easiest thing ever and b) I feel better about eating it than I do store-bought Fluff.

Because I've made marshmallows before, I knew I could make fluff. Because really, all marshmallows are are fluff with gelatin. Making the fluff is a lot easier and less messy than going all the way with the marshmallow (you know what I mean).

Literally, all you do isbeat together egg whites, corn syrup, and salt on high speed for 4-5 minutes until it thickens up. It will turn white and be looking quite like fluff. Then just mix in the confectioners' sugar, vanilla, and cream of tarter and your homemade fluff is done!

🥞 How to make s'mores pancakes

The pancakes are also quite easy to make. What sets s'mores pancakes apart from regular pancakes is that they're made with graham cracker crumbs. Gotta get that graham cracker flavor in when it comes to all things s'mores, right?

I like to put my graham crackers in a Ziplock bag and lightly smash them with a meat tenderizer or potato masher. But you could also use a food processor if this works better for you.

The pancakes also involve chocolate chips because there is no such thing as too much chocolate when it comes to s'mores.

To start on the pancake batter, whisk together flour, sugar, baking powder, salt, and graham cracker crumbs in a large bowl until well combined.

Add whisked egg, melted butter, and milk into the dry ingredients and mix until blended. Fold in chocolate chips.

It's OK if some lumps remain!

Now, heat a griddle or non-stick pan at medium heat and spray lightly with cooking spray or butter.

Ladle about 3 tablespoons of batter onto the hot pan for each pancake.Let pancakes cook until bubbles form before flipping and cooking until golden brown.

Repeat with remaining batter until it's gone.

The most important part of these s'mores pancakes is assembling the stack. Feel free to do this however you want, but here's my recommendation.

Start by melting the Hershey's chocolate bar. Break thechocolate bar up and either put it in a double broiler or in a saucepan over another saucepan of boiling water and stir it until melted.

Or you can just pop it in the microwave and heat it at intervals, stirring in between, until it's melted.

Now, place one pancake on a plate and spoon about 2-3 Tbsp fluff on top. Remember the fluff will spread and ooze, so try your best not to over-do it here.

Repeat this two more times with two more pancakes and a scoop of fluff between them. And then top with more fluff and melted chocolate.

If you're feeling really crazy (which clearly I was), garnish the whole shebang with mini marshmallows and more Hershey Bar pieces (pips, if you will). Oh, and sprinkle some graham cracker crumbs on the top of the stack, for good measure.

I think Chris thought I was crazy for serving graham cracker pancakes covered in marshmallow and chocolate for dinner, but he didn't try to stop me. We've both had rough weeks, we haven't been able to get to the grocery store, and a little chocolate and fluff on top of deliciously fluff pancakes has never hurt a soul.

If anything, it helped us. In fact, I think we're both a little happier this morning.

And when I saw Chris take a bite of the Hershey's chocolate bar I left on the plate for decoration, I knew I was totally justified in my dinner choice. There is never enough chocolate.

They're the perfect way to cure a bad day or simply a bad second and make you feel like a kid again. Bonus points for the fact that you don't even need a campfire or marshmallow roasting stick to make them.

🎉 Substitutions and variations on recipe

I do have a few ways you can make these homemade s'mores pancakes even easier. And a few things you can do to add even more pizazz to them (if you think they need more pizazz!), including:

  • Use chocolate syrup instead of a melted chocolate bar.
  • Use store-bought Fluff or marshmallow sauce if you don't want to make your own.
  • Before serving, use a kitchen torch to give the marshmallows a toasted campfire look.
  • You can make these with pancake mix if you want and just add on the toppings when they're done. You can also try mixing some graham cracker crumbs into the mix, but note you may need to add a little more liquid, too.
  • Use a combination of whole wheat flour and all-purpose.
  • Add a dollop of peanut butter or drizzle on some maple syrup or caramel sauce.

Ingredients

  • 1 cup all-purpose flour
  • 1 Tbsp granulated sugar
  • 1 Tbsp baking powder
  • 1 tsp salt
  • ¾ cups graham cracker crumbs (about 6 graham crackers)
  • 1 large egg, lightly beaten
  • 2 Tbsp unsalted butter, melted
  • 1 ¼ cup milk of your choice (I used soy milk)
  • ¼ cup chocolate chips
  • 1 batch Marshmallow Fluff (recipe below, but feel free to use store-bought Fluff or marshmallow sauce)
  • 1 bar Hershey's Milk Chocolate

Homemade Marshmallow Fluff

  • 2 large egg whites
  • 1 cup corn syrup
  • ¼ tsp salt
  • 1 ½ cup confectioners' sugar
  • 1 Tbsp vanilla extract
  • ¼ tsp cream of tarter

Instructions

  • In a large bowl,whisk together flour, sugar, baking powder, salt, and graham cracker crumbs until well combined.

  • Add whisked egg, melted butter, and milk into the flour mixture and mix until blended. It's OK if some lumps remain. Fold in chocolate chips.

  • Heat a griddle or pan at medium heat and spray lightly with cooking spray.Ladle about 3 tablespoons of batter onto the griddle for each pancake.Let pancakes cook until bubbles form before flipping and cooking until golden brown

  • Breakchocolate bar up and put in a double broiler (or in a saucepan over another saucepan of boiling water) and stir it until melted.

  • To assemble: Spread about 2-3 Tbsp of marshmallow fluff on a pancake. Place a pancake on top and spread with another 2-3 Tbsp fluff. Repeat with a third pancake and then top with additional marshmallow fluff and melted chocolate.

  • Feel free to add garnishes like mini marshmallows, additional pips of chocolate, and graham cracker crumbs. Enjoy!

Marshmallow Fluff

  • In the bowl of a stand mixer or in a large bowl with a hand mixer, beat egg whites, corn syrup, and salt on high speed for 4-5 minutes until mixture thickens quite a bit. The mixture will have started clear, but after beating, it will turn bright white.

  • Beat in confectioners' sugar, vanilla, and cream of tartar on low speed, until combined.

Notes

  • You won't need the whole batch of fluff for these pancakes (unless you get really crazy!), but it will keep in your fridge for about 10 days and makes for amazing peanut butter and fluff sandwiches!
