What is Miso Paste?

Miso is a paste made from fermented soy beans. It’s made by adding a type of mold to the soybeans which works to breakdown the soybeans creating miso.

Miso paste comes in yellow and red colors with the yellow, called white miso paste being a bit milder than the darker versions. I suggest starting to cook with white miso paste first as it is much more flexible and not as strong in flavor.

The flavors attributed to miso include salty, earthy and savory. These contribute to the umami flavor you get from miso, making it a great addition to a variety of dishes for flavor. It works especially well in adding flavor to vegan and vegetarian miso recipes.

Fermented soy beans are easier for the body to process and absorb than other forms of soy. The fermentation process also introduces probiotics into miso which is important for a healthy digestive system.

How to Store Miso Paste

Miso paste will last in your refrigerator forever, as long as you store it in an airtight container.

Miso paste can also be frozen, but you may want to portion it out before freezing it as you can’t unfreeze and refreeze it repeatedly to use in vegetarian miso recipes.

Don’t worry if the color of your white miso paste darkens as it sits there in your refrigerator as that is common and doesn’t mean it’s bad. The flavor may also intensify in miso paste the longer it sits.

Can miso be frozen?

Yes you can freeze miso, but I recommend dividing it into smaller amounts so you can simply remove the amount needed from the freezer. It may lessen the quality of the miso if you are continually freezing, thawing and refreezing. One idea is to transfer it to an ice tray and freeze. Then you can transfer the cubes to a container and store in the freezer.

Which type of miso do you recommend?

If you are new to cooking miso paste recipes, I recommend starting with white miso. It has a softer flavor and won’t overwhelm the dish.

Why does everything taste so salty when I use miso?

One of the main components of miso is salt. It is there as a preservative and is the reason the miso lasts so long in the refrigerator. My suggestion when cooking vegetarian miso recipes is to add any additional salt.
