Fudge

You only need a few ingredients to make this special fudge. It’s called “White Christmas Fudge” because it makes a white chocolate version instead of the traditional milk chocolate. Dried cranberries provide the perfect extra touch, but dried cherries or apricots could be used as well!

I spent some time with my kids with this recipe from a special binder that my sister made as a gift for me years ago. It has some family favorites and it was so fun to pull it out and work together. You know how I lovecooking with kids (and baking too!). It’s taken a lot of years to get to this point but now my kids can find their way around the kitchen and it makes me so happy!

Even though they have a typical brother/sister relationship… (yes, there may have been some arguing at some point), the end result is always worth it in the kitchen. I hope that someday they will look back at their time together with a lot of fun, special memories.

How to make fudge

Although there are lots of fancy recipes out there, making fudge is really simple. It consists of sugar, milk, butter and any mix ins you want to add. Traditionally chocolate is used but for this one we used white chocolate chips in place of milk chocolate.
You’ll notice that milk is most often in these recipes. Dairy milk helps make the holidays better – either in a glass (for good ol’ Saint Nick) or like this as an ingredient in a recipe. It provides taste and nutrition for the whole family. And it’s a simple way to help give kids nutrients they need. This is especially important with my growing teens!

Ingredients

  • 2 ½ c powdered sugar
  • c milk
  • ¼ c butter
  • 12 oz white chocolate chips
  • ¾ c dried cranberries cherries or apricots can be used too

Instructions

  • Line an 8 inch square pan with with foil and grease.

  • Mix powdered sugar and milk in a 3 quart sauce pan.

  • Over medium heat, add butter and stirring constantly, bring to a boil.

  • Without stirring, let boil for 5 minutes.

  • Over low heat, add white chocolate and stir with wire whisk until chocolate melts and is smooth.

  • Stir in dried cranberries.

  • Pour mixture into prepared square pan.

  • Refrigerate for 2 hours until firm.

  • Invert pan, peel off foil and cut into 1 inch squares.

  • Garnish as desired.
